This wine is made from 100% Aglianico del Vulture grapes, harvested in the last ten days of November through the first ten days of December. It undergoes a 30-day maceration and fermentation in stainless steel containers, followed by a minimum of 24 months’ maturation in French oak barrels and tonneaux, and an additional 12 months of bottle aging in volcanic tuff caves. Deep ruby red with garnet reflections and an impenetrable core, it offers an intense bouquet of cherry jam, plum, black cherry, blackberry, blueberry, chocolate, black pepper, dried violet, carob, tobacco, cinnamon, face powder, mace, leather, liquorice, vanilla, and mint. On the palate, it is savoury, fresh, full-bodied, and elegant, with layered notes of plum, black cherry, and blackberry, leading to a long, persistent, and aromatic finish with hints of liquorice and dark chocolate. Ideal with game, roasted and braised meats, aged cheeses, and dark chocolate desserts. Serve at 16–18°C.
