Made from 100% Aglianico del Vulture grapes, harvested during the second and third ten days of October, this wine follows a more traditional production process with a 10-day maceration and fermentation in stainless steel containers. It matures for at least 12 months in second-passage French oak barrels and tonneaux, stored in volcanic tuff caves. The result is an intense ruby red wine with a complex bouquet of black cherry, plum, raspberry, pomegranate, blueberry, blackberry, violet, chocolate, tobacco, vanilla, and mint. On the palate, it is savoury, fresh, and tannic, with flavours of cherry, black cherry, blackberry, and plum, and a persistent finish recalling liquorice root. Perfectly paired with roasted or braised meats, game, and aged cheeses. Best served at 16–18°C.
